Now add some eggplant, chopped kaffir lime leaves, a dash of fish sauce, the sugar and finally the coconut milk. Cook them for few minutes so that all the flavors completely blend. When curry is cooked served it with rice, noodles and garnish it with sweet Thai basil leaves. The procedure of cooking of Thai green curry and Thai red curry is same but only change is that in Thai red curry there is lots of red chillies are added and it is more spicy then Thai green curry.

To cook pad Thai noodles first of all cook noodles. For this take noodles and boil them for few minutes when they are boiled properly drain them and tossed with one tbsp oil. Take a frying pan and pour rest of oil in the frying pan and heat this oil untill it start sizzling when splashed with water. Now add raw prawns in the frying pan and fry for one and a half minutes. Add garlic and chillis and further cook for few seconds. Now pour the beaten eggs in it and fry it untill it looks scrambled, then Sim the heating. Add noodles, fish sauce, lime juice and sugar in it. Toss for few minutes so that everything is mixed properly. Again tossed for few minutes by adding cashew nuts, spring onion and bean sprouts. Garnish it and serve with sauce.

The ingredients needed to cook Thai fishcakes at home white-fleshed fish fillets, kaffir lime leaves, snipped into thin strips, coconut milk, fish sauce, shrimp paste, chili powder, ground cumin, ground coriander, brown sugar, green onions, sliced thumb-size piece galangal, ginger, cloves garlic, red chili, dried crushed chili, cucumber oil. Make small pieces of fish. Add coconut milk, fish sauce, shrimp paste, chili powder, cumin, ground coriander, and brown sugar, mix well and pour over the fish. Add remaining ingredients to make a thick paste. Pat this paste on fish cakes. Put these cakes about 10-15 min. in freezer. Heat the oil in the frying pan and put freezed cakes in the oil and fried until its color changes into golden brown. Garnish cakes with sliced cucumber, Thai chilli sauce, fresh coriander and with lime juice. Served with rice.
